Book Twenty- Five: The Fannie Farmer Cookbook




 Fluffy Egg Nest

This was my very first cookbook. It certainly has seen better days; but what do you expect after 30 years! Wow...cannot believe it has been that long, and that I still have this book!

How could one not be enticed by the name of this recipe? And just about everyone I'm sure has all the ingredients at hand, no running to the store! This would be a fun one to make for Easter with the kiddies. It is super easy and fun. Not to mention it tastes really good too!

Fluffy Egg Nest
Serves 4

One golden yolk nestles in a tender nest of egg white.

4 eggs
½ tsp salt
4 slices toast
4 tsp butter (I used closer to ½ tsp for one egg)
4 tsp heavy cream (I used half and half)

Preheat oven to 375°. Separate the eggs and beat the whites with the salt until they are stiff but not dry. Put the toast on a cookie sheet. Mound a fourth of the whites on each piece of toast. Using the back of a teaspoon, make a dent or nest in the center of each mound. Put 1 teaspoon of butter and 1 egg yolk in each nest. Spoon 1 teaspoon of cream over each yolk. (I also added a sprinkling of pepper). Bake for 10-12 minutes, or until the whites are golden and the yolk is slightly set.

  1. One of my favorite breakfasts - my siblings and I often have this one when we have our AGMs (annual general meetings - we all live scattered about but try to get together at least once a year:). Your photos and description are great - good luck in your personal challenge!
