Book Eighty-Seven: Mollie Katzen's Vegetable Heaven

                                        The Ten-Minute Pasta Dinner

I was so excited when I came across this recipe. Not only did I have all the ingredients (plus some) on hand, but I got to check off another book from the bookshelf.

This was a super fast and easy dish to make. Perfect for when you are short on time or just too pooped to cook.

I had some sun-dried tomatoes in the fridge and
decided to add those in as well.


The Ten-Minute Pasta Dinner
Serves 3 to 4 (easily multiplied)

¾ lb. pasta, any shape
1 to 2 Tbl. extra virgin olive oil (to taste)
1 Tbl. minced garlic
Chopped fresh spinach or arugula (a few handfuls, if available)
Red pepper flakes

Put up the water to boil. When it boils rapidly, add the pasta.

Drain the pasta, transfer it to a bowl, and drizzle with olive oil. Toss with a long-handled fork or with tongs, adding the garlic and greens, and sprinkling in the parmesan and red pepper flakes as you toss.

Serve hot, possibly accompanied by leftover cooked vegetables, straight from the refrigerator or heated up in the microwave.
