Book 101: Desserts by the Yard

by Sherry Yard

Three simple ingredients: water, lemon, and sugar. Optional fourth ingredient: Grand Marnier.

So refreshing!

May not look like much, but boy does it pack a punch!
Its tart, a close-one-eye, pucker, kind of tart!
For a less of a pucker punch - use Meyer lemons.

Yep, it was a hot day - and this hit the spot.

I will definitely be making this again, too easy and fabulous not too! I'm thinking of using oranges for my next batch. I can almost taste it already.

Italian Lemon Ice
Serves 6

2½ cups water
1½ cups sugar
2 teaspoons grated lemon zest
1 cup strained fresh lemon juice (6-7 lemons)

6 6-ounce Dixie paper cups or ramikins

1.     Combine the water and sugar in a medium saucepan and bring to a boil, stirring to dissolve the sugar. Remove from the heat and allow to cool to room temperature.
2.     Stir in the lemon zest and juice and pour into the paper cups (or other container). Freeze until solid
3.     Serve to kids on the back porch, with spoons for scraping.

Variation:

In California I make this with Meyer lemons, and for adults I add a tablespoon of vodka or Grand Marnier to the mix.
