Book 113: The Silver Palate Good Times Cookbook | Sunny Baked Eggs

We've been pretty stagnant in the breakfast arena; eggs on winter wheat toast or English muffin, with some fruit on the side a few times a week, and oatmeal and fruit on the other days. Mornings I do not get up early to make breakfast, Andy will make himself toast and peanut butter and I'll have cereal. It has been this way for the  l o n g e s t  time.

I'm always on the look out for something new for breakfast, and was excited to come across this recipe.

I gave this a trial run when I was on my own for breakfast. It's super easy to make - you can even make them on your busy weekday mornings if you have the (very little) prep work done the night before - chopping some parsley, mincing a little ham, and cubing a little Brie; and feel free to change up the ingredients to your liking - your favorite herb or cheese, and if you don't eat meat, omit it. This is a very versatile dish.

It only takes about twenty minutes in the oven to bake - actually less in my oven. I meant to check on them at about fifteen minutes in, and I got busy on the computer, and well, you know how that goes... and my eggs were overcooked - they were fine... I just prefer my yolks on the runny side, not firm.

This recipe is similar to the one I made years ago for Mother's Day brunch, a little more work, but very impressive to say the least.

These will have rerun in our house. I think Andy will like them - especially if I replace the ham with mushrooms, and switch out the Brie with maybe some smoked cheddar or Gruyère.. oh the possibilities.

We All Scream For...

COFFEE ICE CREAM!!!

This is good. Lick the plate clean good.

This is the third recipe I have made from this book - all outstanding! I love everything about this book from the cover, to the stories and tips inside and even the feel of the book; and of course the recipes. If you buy only one cookbook this year, this should be it.

I stole a wee taste as the mixture was cooling to room temperature and this is great from the get-go. Already it is smooth and creamy with a wonderful coffee flavor, tasting like I imagined the finished product would be, only cold. I think this would be good as is poured over strawberries and pound cake. It is going to be hard to wait for it to finish chilling so I can devour this lovely concoction. This coming from a person that is not real fond of ice cream; I prefer frozen yogurt, till now maybe. Coffee ice cream is my sister's favorite and I told her I would save her some - not sure there will be any to save.

I was tempted to add some grated dark chocolate to the ice cream, but after having that sweet taste I thought to leave well enough alone. Now that it sits in the freezer I'm wishing I had, just to add a bit of visual pop to the ice cream. Next time. There will be a next time.

Stir until dissolved.

Whisk your yolks just till combined.

Stir until the mixture "coats the back of a spoon".
This means you can run your finger through it and
the track remains - it does not close back up.






Cover room temperature mixture with plastic wrap.
Making sure that the wrap touches the mixture itself
to keep a skin from forming.

Chilled and ready to freeze!






 




What made me go to this book again is that I saw this recipe on a fellow bloggers website and for the life of me I cannot recall which one. I thought that I had bookmarked the page. Book Fifty-Two: Mediterranean Light

                        Slow-Baked Tomatoes

Tuesdays are puzzle night in which my sister comes over and we enjoy dinner, wine and well, a puzzle.

On occasion she brings the main course, and this Tuesday she brought a  Mediterranean chicken dish. I have this yummy couscous vegetable salad* that I made along with these slow-baked tomatoes. These turned out much better than the ones I tried before on the grill. The fresh garlic was way more flavorful and did not have the "burnt" taste that the browned garlic in oil produced in my previous post.
